Generally, they buy the same exact model. Or a stainless built in. Panels can rarely be re-used, and new panels will not be the same olor as the aged panels, even if they can find the original supplier of those panels.

Here's a stupid question: are panels always wood or is it possible to get metal panels painted in a color that you like? My wife doesn't like the look of too much stainless steel in the kitchen (and also doesn't like cleaning it), but I can't really find anything in a color that I like.

Painted metal panels would be a custom thing, and may be harder to get fabricated than a wood panel. A company like Frigo Designs might be a place to look.

The other option would be to do wood panels and have them painted in a color that you like, but to use a good sprayed paint or epoxy finish.
