You'll find much more range advice browsing the Appliance forum. I've got a 30" BS but I don't think it'd meet your pre-heat requirement. I don't know the exact time, but it takes a long time to pre-heat. And I assume a 36" would just take longer. I think with no electronics, that's the trade-off. I would guess that duel fuel would be better in that respect.

Just regarding your preheat time - I think it is unrealistic to expect a 36" oven to get to 350 much faster than your Thermador; maybe you'll find one that saves 5 minutes. I would cross that requirement off my list.

Since you were already burned (yes, that was a bad pun) by Thermador's customer service, I would be wary of Bluestar. People love the Bluestar ranges' performance, but the number of customer service problems is really high.
