With ours, when they came to measure they took the sink with them back to the shop. After they marked out the layout at the shop I went to make sure I liked where everything would be(my stone had some blobs I wanted to avoid). They brought the sink back when they installed. Holes for faucets/soap dispensers are done on site at installation.

Not necessarily - mine were done at the fabricators

YOur fabricator should be communicating the specific requirements for your measure to you prior to the measure so you can be prepared. If the fabricator is not doing so it's a good indicator that he is somewhat less than professional.

If you leave the sink at the fabricators, be sure to open the box, examine the sink, and even take pictures of it. I didn't, the sink was delivered, I looked at it briefly, and delivered it to the fabricators. When they were done, and I picked up the sink, it was dented, (the rim was bent). Of course they said it wasn't their fault and that it must have been that way when I gave it to them.
