Granite Edges-Antique Texture Possible? How Get?

Hi, Everyone.

We are redoing out kitchen and would like to know about smooth vs. textured edging on granite countertops. Hoping someone here has some knowledge on this subject.

We have seen display kitchens with tops that are antiqued textured granites. Beautiful! The tops are textured, but not all have edges that are textured like the top, at least one has smooth edges..

Does anybody know more about edging?

1- Is it necessary for the fabricator to use special tools to get a textured feeling on the edge of the granite or (as we are being told) does honing the edge sometimes result in a textured feel to the edge because that particular type of granite reacts that way when honed?

2-Is it possible to get the edges of steel gray granite with antique textured to match the texture of the top or is it always very very smooth when honed?

Additional Info-What We Saw / Were Told:
Each granite we saw at a different shop
in a display kitchen

Cambria Black (Shop A)
Nordic Black (Shop B)
Finish: Antique
Edges: Feel textured
Shop Owner A Told Us: 1) Edges are honed 2) Fabricator cannot texture the edges. The edges feel textured because of the type of granite the honing was done on. But the edges feel textured-even the sink cut out!
Shop Owner B Told Us: 1) Edges on our installed counter will feel same as in display at their shop. We did not get a straight answer as to whether this requires special equipment to put a texture on the edge.

Steel Gray (Shop C) (Granite we want to get!)
Finish: Antique
Edges: Smooth, non-shiny
Shop Tells Us: Edges are honed. There is no way to get the edges textured to match the top.

(Shop D)
Shop Tells Us: The fabricator can texture the edges but it would cost more money than we would want to pay.

I would really like to get Steel Gray with textured edges. Is this an option these fabricators are just not offering? Or is it truly not possible for the fabricator to texture the edges?

Any help will be greatly appreciated!

Thanks so much!

Jeanne
