soapstone and granite slabs for review

Ongoing saga of choosing soapstone vs granite. Thanks to the encouragement from another thread, I made it to the stone yard with the soapstone today.

Help me choose!The tile is the sunflower ming green that I found here through gardenwebbers thanks! My cabinets are Dove White and my probable paint color is BM wickham grey (green/gray)

For this thread, the backsplash sunflower tile is nonnegotiable.

1) Amazon, similar to PA original, very hard
Dry


Wet

2)Julia, medium hard per granite yard
dry in shade

wet (sorry forthe brightness)

3) smoke, medium hard

4) Fumaca, medium hard

5: Jet mist granite honed

Very light exposure to see the granite detail

Stones 1-4 are the soapstones with honed soapstone texture. I love the smoke (3) but is it too busy for my tile? Also, I have to make sure it is as hard as they say.
Stores 5 and 6 are leathered but still smooth to the touch. somewhat cheaper granites.
Stone 7 is polished but the pearly inclusions mesmerized me.Slightly more cost than the soapstone.
