Baci D'Alassio..using a pastry bag

DH is still working his way through Il Fornaio. This company opened bakeries in CA in the early 80's. The book came out in 1993 .

These Chocolate Hazelnut Kisses are so easy to make and taste absolutely scrumptious. We don't have hazelnuts so he used almonds. It worked like a charm. The name of the cookie is a seaside town in Liguria.

DH had never used a pastry bag before. He also had never made ganache. All new learning curves for him. I think he did a great job. I will link the recipe below. He substituted the chocolate ganache which is a departure from the cookbook but others have done it. Also the recipe says it makes 30 1" cookies...this is 60 singles that you pair with the ganache. IRL it made 200 ! So he made 100 finished cookies...OMG...who is going to eat all of these ??? I should link the directions to our house LOL.

Is that parchment paper? If you use a lot of it, I HIGHLY recommend this. I cannot live without it. The natiest sauces that get burned on a cookie sheet and take a day to scrub just fall off of this stuff and even fish smells come right out: http://www.frontiercoop.com/products.php?ct=ssbfscba&cn=Culinary++-+Reusable+Parchment+Paper+13x17+in.

bahaca you are not the 1st that has mentioned those. I will look into it as we do use them a lot. I also have to have the paper ones for my sourdough breads, I tear the paper to fit the pot. Thanks for the suggestion.

steph...they say they are even better after a week LOL...we'll see how THAT goes...they are very rich. Had 2 so far...email your address :)

yes rhome...your tribe would make short work of these...they are easy peasy...do them for Christmas...a sweet kiss for each of your sweet ones. c

Yes prill and very tasty :) Kids all say we have to bring them for the holiday...DH is going to get really good at the pastry tube LOL. c

Those look fantastic! With the number the recipe produces, I'm thinking this is a good idea for my holiday cookie exchange. Thanks for the recipe link.

dee850: they are very rich and chewy. Never had a cookie like these. I can eat 3 of them and that is all :) Each is the size of a quarter. The ganache is lovely since it is rich but not sweet. We used semi-sweet Ghirardelli chips equal amounts of choc/cream. You can also use bittersweet choc. Heat cream just to boil. Pour over the choc. Stir. Cool slightly and then beat till creamy thick.
