Light colored backsplash/staining?

For those that have a light colored backsplash, have you had problems with it staining?

I love the look of mpagmom's but am concerned about the area behind the cooktop. I cook a lot and I have children that like to help and will eventually be cooking. Think tomato based sauce slopped on the wall by someone. I know if I do it I'll wipe it quickly but others may not notice it. ;-)

I am hoping to have stainless steel counters in the cooktop area. Would it look terrible to have a stainless backsplash the width of the cooktop all the way up to the hood and then the pretty tile backsplash on either side?
