I have heard of people cutting larger tiles into the smaller size that they want. Maybe that would be an option?

If the space between the counter and the uppers is 18" which is pretty standard, you could get an interesting layout with a series of only a few vertical grout lines. Cutting around the outlets would be tricky, and with a large format, the layout is pretty crucial.

But, I think it could be kind of interesting to have a near seamless appearance.

We are thinking of something similar. I was looking at 18 x 18 most recently, with the goal of the relatively seamless/groutlelss installation. Haven't talked to the tile guy yet, but the architect said it wouldn't be a problem. I have only seen this done once in real life, but I really liked the way it looked. We are a long way from installation, but yes, the layout will be crucial, so will need to get it figured out before electrical rough-in.

I'd love to see more examples in finished projects, if anyone has any.

Unfortunately our hood/canopy already installed, DH fretting over fitting tile in such tight space between the hood and cabinets on each side of range.

Of course it does, because it takes a lot of time to do. Can you post a picture of the tile you picked, or the name, or color. Maybe someone here can point you toward a similar tile in a more workable size?

Take a 4' level to the backsplash and find out exactly how level/plumb it is first. Large format tile needs a much flatter substrate. It's doable, but you may need to do some drywall work first. Doing the electrical cutouts is pretty simple with a kraft paper or cardboard template and a multi-tool. (Be sure to buy the electrical box extensions that you will need.) Any true tile professional should be able to handle it. Not the lowball bid guys, but anybody who makes the investment in his business to own the right tools.
