Can honed jet mist ETCH? (pictures)

Here are pictures of my honed jet mist sample that have been tested and retested with lemon juice and tomato paste (Oil, soy sauce, and water had no effect). These are the same sample, moving left to right. The smaller blotches are tomato paste and the larger blotches are lemon juice. Both were left overnight then washed off with soap and water, and a light rubbing of both a scrubbie and then steel wool. Of course these surface changes cannot be seen except at certain light angles, but I think this could be a deal breaker.

I expected a little staining since the sample is not sealed, but I was hugely surprised to see instead what looked like etching (I have a marble sample with great etching examples). This would be really disappointing sincehoned jet mist had moved to the top of my choices. Of all the soapstones and darker granites I have samples of, this is the only sample that showed changes after the acids were applied.

Any ideas on what else these could be and how to remove them?
