Bluestone, Soapstone, or Pietra on Countertop

I have bluestone (flagstone) on my outdoor patio and I'm thinking about using a honed bluestone slab for the countertop on my kitchen island. It is Pennsylvania bluestone (a quartzitic sandstone), not Belgium Bluestone (which is a limestone).

The perimeters of my kitchen are Mont Blanc quartzite (natural stone, not quartz).

Other options for the island are soapstone, pietra, a black granite (Absolute Black? Jet Mist?), or get a 2nd slab of Mont Blanc.

I've seen a few photos of bluestone for indoor kitchen counters, but more for outdoors. Wondering about the upkeep and how it will look paired with the quartzite.

    I was drawn to this post as we have a bluestone patio & were advised against using it for the outdoor grill surround due to staining, specifically oil. I found the attached article. I have marble in my kitchen & could google & probably find 50 articles advising against marble. I would get a sample of the PA Bluestone & test it.
