Wood countertop experience?

I am considering a wood countertop on my peninsula. The peninsula has a prep sink in it and I will be prepping on it; at one end will be the cooktop. I know it would look good, in theory....my question is do they really hold up to water, prepping, etc? I got a brochure from Home Expo on their Heirloom brand and it says they are waterproof (not water resistant but waterproof) and scratch resistant and all things I never thought wood could be. I talked to the cabinet guy yesterday and he says he also makes them and gives the same guarantees...says it's in the quality of sealing. I guess at the other end, I'm also curious about the proxity to the cooktop...seems like heat and wood aren't a great mix either or am I crazy? I'm curious what real-life experience GW'ers have to offer? (And, just as an aside, how do they compare in price to stone?)
