Butcher block countertops

I'm sure this topic has been discussed ad nauseam but in the research I've done I haven't been able to find the answer I'm looking for. I'm going to install butcher block countertops in my new kitchen and would like to use a chemical sealer to protect the underside of the counters from the dishwasher, sink, etc and use mineral oil on the top so it's food safe etc. Does this make sense to do? Anyone done this before?

My second question is if I end up sealing both sides of the butcher block, there won't be a need to use mineral oil ever will there?
