Pick whatever edge you like; neither would prevent spills more than the other.

I don't recommend an ogee where they drop the cutter to make a very small sharp profile. These always chip and are more difficult to repair. Keep a rounded top on your ogee.

If you are real worried about spills the fabricator can saw a notch into the underside of the overhanging edge. The notch causes any liquids to fall from there rather than getting back to the cabinetry. Drip lines are mostly standard in Europe but have never been adopted here in the states.
