Stuck (help): Kitchen lighting?

We have finalized most of our remodeling choices (appliances - SS, granite - Ipanema White or Dallas White, backspash - white subway tile, cabinets - gel stained Java/Brown Mahogany, sink - Blanco white Silgranit or Kraus 16 gauge, faucet - brushed satin SS)...
I would love suggestions on what to consider as a replacement for our kitchen lighting/fan. We gravitate towards transitional design, but I'm still stuck on what would "scale" properly in this room - I guess I'm so used to the large footprint of the fan. We are keeping the soffit to run the range hood exhaust thru it. The soffit is 11.5 and if helpful the height of the fan light is 17" from the ceiling and the fan blades are 42" wide. Hoping to find something under $500.
