I'm far from expert, but I thought that you do not want to have the lights so far away from the counters (as in scheme #1) but perhaps having UCL makes that rule obsolete?

I don't think that a light in the center of the room is odd, you could put a decorative fixture there if you wanted. I am not sure that a single 4" is enough to illuminate that space though (not clear just how big the space is or how large is the diameter of light for that size).

I don't get the light in front of the window, though. Seems a bit too far away to illuminate the 15" cabinet there so what is the purpose? On the other hand do you really need the close counter illumination next to the fridge (will it be a work space, or just mostly a landing spot?) I have my 6" downlights (similar arrangement of pantry/frg/counter) about 16" off the cabinets, lined up with the left (when facing them) edge of the cabinets.

Do you need some light in that lower left hand corner?

I am guessing you have an over the sink pendant shown above the window. Have you planned what you are getting for UCL? I would check the brightness levels to see if they can be used as your task lighting. If yes, then you wouldn't need the recessed lighting on top of the counter top. Some of the UCLs are so blinding that you have to use them on dimmers. The first plan will look aesthetically pleasing and provide enough general lighting.
