I suspect that any pull down faucet that doesn't have a magnet lock will do the same. Now that I think about it, probably even the ones w/the magnet lock will do the same.

Could you go to a big box or plumbing store and check out the faucets?

Many manufacturers have kitchen faucets with a ball joint at the end of the hose where it connects to a small handspray. Usually the hose has a braided nylon fabric sheathing, not a metal coil sheath.

Riobel is one company that has gone that route for all of their kitchen faucets. The Edge is one faucet I remember seeing.

Moen, Delta, Price Pfister, Kohler and many others also have this, but not yet in all of their faucets.

Call or email these manufacturers and others. I agree with your point of view, to be able to point the water in any direction and (essentially) leave it alone, or walk away from it while it continues spraying in that direction.

It is impossible to tell from online pictures if a faucet will do that or not. I don't get it: why is it so hard to see the functionality of the sprayer? Why haven't they turned it into a selling feature? Why don't they see it as a benefit? Why aren't they promoting it?

Some of the newer faucets manage to re-seat the sprayer so well that you won't be able to leave the sprayer half-docked and pointing to the side. This just goes to show that they still don't get it. Why don't they see that people might want one-handed operation and hands-free operation?? Beats me.

There are also ball joint bubblers that you can use to replace the bubbler on a standard faucet. They're not pretty but they're very functional, letting you control spray and stream, as well as direction.
