Cabinet/backsplash thinking, please!

Working a mini reno on a tiny kitchen: I don't need bigger, but I do need smarter. So contractor who I love suggests taking cabinets to ceiling, which seems good to me on sink side. But on cooktop side they're both asymmetrical and don't leave room for a new more powerful cooktop, which is the whole reason we're doing this (that and either soapstone or leathered granite on counters instead of laminate!). Considering removing cabinets on cooktop wall and doing something handsome as backsplash, maybe with a couple shelves for spices/oils/utensils. Crazy? Better ideas? Help appreciated. (Also, tiny + functional windows = I'm figuring a downdraft to meet code, even though I know they don't work. Can't do hood without extra $5k+ to knock thru old chimney in corner. Also crazy?)
Thanks for any thoughts!
