DIY backsplash question

My kitchen remodel is now 6 years old. I still have no backsplash (talk about indecision). However, I would really like to add one. We are talking about selling this house now and I think a backsplash would just make the kitchen look "finished".

Okay, so now on to my question... I found some reasonably priced mosaic glass tiles for a good price at Home Depot that would work good with my cabinets and counters. I don't have a hugh BS area to cover, so the cost would not be that great. I have watched enough HGTV kitchen remodels and done some research on line and think we could DIY the backsplash. However, my husband is asking how we deal with the electrical outlets, etc. The mosaics are about 1/8 to 1/4 inch thick, so we would need to bring the outlets out some to compensate for the tiles and so we can put the outlet covers back on....am I making sense? Soooo how do we do this? Would my husband be able to do this?
