Kitchen sink

Hi! I just bought my first home and am new to essentially every element of home ownership or selecting of finishes!

I am building a new kitchen with white cabinets, White Fantasy granite (looks almost like marble!) and GE Cafe appliances! I need to pick a kitchen sink though.

Any thoughts out there on the pros and cons of the following materials (I'm doing an undermount sink):
1. Cast Iron (Kohler) - is chipping a real life concern and do I need to buy a separate support kit to support the weight?
2. Silgranite (Blanco) - no one seems to have white or light sinks in their show rooms; is there a reason for that? Are the light colors easier to stain?
3. Stainless Steel?

Or any thoughts on color selection of what would look best against the white cabinets, stainless steel appliances and White Fantasy granite? Selections I'm considering include:
1. White
2. Biscuit (off white)
3. Truffle (deeper brownish/grey)
