Good old graph paper and a pencil is still the best method. Don't forget to account for the spacing of the grout lines.

I just play around with Power Point. I create it to scale as close as possible, cut and paste cabinet doors and make little rectangles. :) Works pretty well.

And OldBat is pretty darn good with Photoshop. Takes a sample and puts it into the kitchen!

I use Photoshop Elements, much cheaper than Photoshop. I've done pretty well at times with Google Sketch-up too. Learning curve with both. Key with Elements is taking pictures from 'straight on' (makes everything so much easier).
