Kitchen reno first timer - am I even doing this right?

So we've demo-ed out our kitchen already and the cabinet dealer that we went with only does cabinets, and now that I'm really really thinking about how everything else goes in, I'm not sure I've got it right! (I know, I know, I'm a don't look before you leap type of girl. Oops)

So new cabinets are being installed Monday, I have electrician coming this week to move and change the outlets and power as needed to put in my induction cooktop and add a 220 line for my oven that I'm moving to another wall. That part seems all good. Granite is coming in later in the week, but now I don't know if I need to hire a plumber first to put the farmhouse sink into the cabinet. Hubby knows that the plumbing needs to be lowered and wants to do it himself, but is this a good idea to DIY? The sink is in the island and now that we've demo-ed out, all the piping is just sticking out of the ground, so I should have that done now before they try to fit the cabinet back in front of it right??

HELP!
