Picking granite for white cabinets / Carrara backsplash

We're working on a kitchen remodel. We have a smaller kitchen in a fairly traditional Cape house in the Boston area. We are having the cabinets refaced with painted wood -- Benjamin Moore Simply White. We also have our hearts set on a Bianco Carrara backsplash (3x6 subway tiles), and have ordered new stainless appliances. The remaining question for us is the granite color. At first we'd been looking at white-ish granites (Bianco Romano, River White, Colonial Cream or Ivory) but are now worried that there may be too much white.

Any suggestions for good granite colors to use in a kitchen that's otherwise mostly white? Good to stay white? Or do something contrasting?

Overall, we're going for an updated traditional look.
