What would you do with this???

Apologies this is is a cross post. I am replacing the countertops with soapstone, and a Shaw's sink will be installed. My earlier post was regarding the 4" backsplash. I think I prefer not to do it, but what would anyone suggest with this space behind the sink? I hate that gap between the molding and the corian. I don;t think I will like the dark soapstone up to the white molding.I think I want to get rid of the molding altogether and go with a pretty tile? Suggestions? Thanks!
