seal, beeswax, oil, wood countertop

My DH is putting the kitchen in the "new" house (1970) tomorrow. He has one 18" cabinet that he didn't order countertop for. It will be between the refrigerator & stove, so he decided that he's going to get a chunk of hardwood, probably maple, & make a countertop/cutting board out of it.

My question: Since it will most likely naked, what would be the best to treat it? I've heard beeswax & mineral oil. I'm not crazy about polyurethane (don't even know if it would be OK for food). I've seen products with both beeswax & mineral oil combined. Is this a good option? I mainly want something to condition the wood & might bring out the grain.

I'm open to any thoughts & suggestions.
