Check out soapstone. Remnants can be seamed almost invisibly and depending where you live can be reasonable.

How about Ikea's butcherblock? It's super affordable and you could do a darker color (beech, stained... or their oak is actually really nice) to contrast with your maple floors:

I just had white cabinets installed and chose Formica 180fx laminate in Black Fossilstone:

Formica Basalt slate was also recommended to me by someone on this forum. It looks similiar to soapstone.

Another vote for dark. Soapstone or that laminate Farmwife posted, or something else with a similar look, is a classic, classic look with white cabs and a light wood floor.
