If you are buying from an authorized dealer the material is the same. It is the fitment that will not be customized. Buying from a non-authorized dealer you can get Chinese knock-off quartz.

The problem comes if your countertop is not a perfect rectangle because the walls and floors are not at perfect 90 degree angles. Because the soil beneath the house has shifted over the years. The older the house the bigger the problem with prefab.

The biggest problem you're going to have is getting a competent fabricator/installer. You don't want someone cheap. I'd give the guy no money down, make him buy the quartz, and pay at complete satisfaction only.
