Anyone used cork countertops?

I am planning a built in hutch/bar. This area will not be used for any food prep but will be used for beverage set up or as a buffet when entertaining depending on the situation. At this point I am considering 3 possibilities for this area, cork, wood (stained kind of dark walnut) or paperstone. As I currently use cork trivets to protect my table from heat I'm not too concerned about setting a hot dish on it and I do plan on treating the countertop with a wax or other food grade treatment.
Here are a few pics of a cork countertop I found- The last one is actually cork click flooring used as countertop. Sorry you can just see a corner of the countertop he made.
