There are a lot of tiles out there for a lot less than $100+ per square foot that don't look cheap. If I were ordering online, though, I would order samples first. Pictures can be deceiving, and on the other hand, often don't do the actual product justice.
Regardless of the tile selected, installation can really make a difference.

I spent a lot of time looking at backsplash tile. The only difference I see it that you get more choices (colors, shapes, sizes) with a more expensive tile. Determine the "look" you want and then find tile that gives it to you. Only you can determine how much you are willing to spend. I am very happy with my less than $3 per SF backsplash tile. I agree that installation is the key.

The difference is you get ripped off if you pay $100+/sq ft for backsplash tile vs. getting a decent deal on tile that you love. There is no reason (in my book) to pay that much. You can find beautiful tile starting at $10/sq ft. Go to some stores, look online, you will find something that you love that won't break the bank... even if you can afford it.

Have you looked at waterworks? They are all individually made, beautiful and found some that were about $25 sqft. Honestly, best quality I've felt yet. I'm looking at crackle tile by them.

Ann Sacks Basic line has some really nice tiles, some even as low as 15.00 per sq. ft.

For sure, you can get a high end look for a lot less. Post pictures of your kitchen & your tile ideas.
