There are so many similar carts available that have unfinished butcher block tops ... I'd look for one like that instead of one with a lacquer finish if I planned to use it as a cutting board. That said, I have a portable cart in my own kitchen with an unfinished top and when it got a bit worn, I just sanded it down with some fine grit paper and it was like new.

I looked at those and ended up with a gorgeous Boos cart with a 5 inch butcher block top that is designed for cutting. They are very well made. I snagged the "wine cart" on Craig's list. It was brand new and still needed some assembly required. Mine has heavy duty wheels so is can move it around.
Boos also makes carts that have a finish so talk to them on what you want.

PS - even though it is designed for cutting, I haven't been brave enough to do so yet...

I've actually seen these in our Homegoods (Stuart, FL) from time to time, at amazingly good prices. So if you have one in your area, start haunting it.
