Bathroom tile replacement

I need help replacing a heavy tile on the bathroom wall. The tile tile came loose and behind it was thick white thinset. I attempted to remove the old thinset and in the process removed large chunks of what appeared to be concrete over the drywall. There is also a glossy white plaster looking material over the concrete like substance. What can I use to patch that concrete like material and can it be applied over the areas that still have the glossy white plaster material.

When we tried to tear out our backsplash it was impossible and the tile guy ended up just cutting the drywall out and replacing it. He said it is so much easier and faster and then you have a flat surface to work with. It seemed like it went really fast and was much less messy in the end. Not sure if that would be possible for you. They just cut the drywall to fit, taped, mudded and we were off to the races with the tile.
