which tile with this backsplash?

We're going to put in a somewhat directional backsplash--it has a definite up and down (well, it can go up OR down, just not so much sideways).

We're going to use the same tile on a section of countertop,not connected to the backsplash. Can I lay this tile flat, or should I put a square tile with the same glaze on the counter?

Can I put that flat, and if so, which way? It can also be installed like this (also from Fireclay's gallery):

This would be less directional flat but it reminds me of parasitic worms or short 'n' curlies on a public shower's floor. Would it be enough less squiggledy with lower contrast grout?

Or just squares on counter?
