OT: Time to take a reading break....The Science of Baking....

Since we are putting so much time and effort into creating fabulous kitchens, some of us might need a little help becoming equally fabulous cooks/bakers. *raises own hand*

I just came across this excellent, short article on some of the science behind baking...think Alton Brown in print. I already know and do these baking techniques but I didn't know the 'why'.

I've seen this chef, Joanne Chang, on television in one of Bobby Flays Throwdowns (I think). She is good.
