Tile layout for back splash

With my flooring, I tried to lay it out, so that there was not a sliver at the cabinets. I tried to center the tiles to the walkway.

Should I do the same for my backsplash? I'm going to go with a diagonal/diamond pattern. I was thinking about centering it to the range hood. I guess the tile guy would have to start at the centerline of the range. Then there should be similar width pieces at the exposed sides of the cabinets (cabinets adjacent to range hood). Doing it this way may leave a small piece on the ends.

What are your thoughts? Is this a good idea, or should I just have him start at the edge of the wall?

My next question pertains to the end of the tile work. What is the normal way to have a finished edge? The tile place suggested just using pencil tile for the exposed edges.
