Range "nook" tile to ceiling or let it recede?

Hello all!

My user name is dark and tiny but having been on these forums for awhile my kitchen is really dark and AWKWARD not dark and tiny!

I have gotten great advice on making the most of my layout (there are a lot of constraints in this old house) and now I am wondering what to do with the wall behind and near the range. I am on a budget and love subway but not sure how that will look. I do not want to get too modern to fit with the style of my house. I am in an 100 year old house in Maine.

Cabinets are white.

Nook above the range is 53 wide by 30 or so tall. Adjacent chimney is about 18-20 in deep (depending on some finishing choices)

There is a soffit above so the range and hood sit back in a little nook of sorts with a 7 foot ceiling (range hood goes up into soffit) and a cementboard lined chimney on the right hand side.

So do I paint? Tile? Make the nook recede or be a focal point?
