I am going through the same sink decision right now - comparing Poise vs. 8-degree. I am installing a kitchen sink and bar/prep sink.
Between my contractor and showroom manager, I have cobbled together an answer that makes sense to me.
The "8-degrees" is the angle of the lip on the sink, or bevel. This bevel prevents splashing. However, it also reduces the surface area of the bottom on the sink because those walls are pushed inward. So, overall, you have less room at sink floor than the opening at the top.
The "8-degree" sinks have this bevel at the front and the back....but not the sides.
The Poise sink has this bevel on all 4 sides -- the front, back and 2 sides of the sink have a beveled edge. I'm told this 4-sided bevel reduces splashing even more. The trade-off is that you're losing even more space at the sink bottom, with all 4 edges beveled inward.
When i looked at them in-person, the kitchen sink area didn't seem noticeably different. But the Poise bar sink seemed noticeably smaller at the bottom than the 8-degree sink. Also, some people install their faucets on the side of bar sinks, so the bevel on the sides of the Poise sink is helpful in reducing the splashing that is pretty common in smaller bar sinks.
I don't have either one installed yet, so I can't comment on whether or not all of this is true in real life use, but I wanted to write this long-winded novel of useless info because for some reason, this exact question was driving me to distraction!
