Tile behind stove top

I recently took down an over the range microwave and put in a simple range hood because the mircrowave was too low and was driving me crazy. Now, however, I don't know how to fix the missing tile. I have tried to find the same tile but so far, no luck. I would prefer not to have to replace all the tile in my kitchen but I need to take down atleast the top row here as it is uneven. Can i remove just some of tile and put in something decorative? I also thought about trying to cover with a stainless steel plate but it is uneven... any help would be appreciated!
