The wallpaper will come off! We're putting in a granite countertop (Imperial Coffee) and after it's in, will decide on a backsplash color and design. My question is what to do with the soffit? Hide it by painting it white like the ceiling, or go with a neutral that blends with the backsplash?

I paint soffits wall color because there is generally a location where they meet the wall and it looks odd to me if you change color.

Wow! I have a soffit challenge too! I'll be anxiously awaiting any good advice you get....... I'm thinking of covering them with my cabinet wood with carvings and then going all the way up to the ceiling with a large crown so it (hopefully) appears that the cabinets go all the way up. My KD thinks it can be done. Good Luck!
