Countertop for new White Country Kitchen

I need help. I can't decide on a countertop for our new kitchen (it was a massive renovation/remodel project, that included a 6' addition). I was originally leaning towards whitish granites but now I'm having 2nd thoughts, our house is a stone farmhouse circa 1800s, we exposed the stone on the inside and restored it. Its beautiful. I would like to tie the colors of the stone into the countertop. What about soapstone?

I like the look of subway tile backsplashes in white kitchens but I don't know if that looks good with anything but marble?

Kitchen: Dove White, shaker style, Cocoa glazed Kraftmaid cabinets, hardwood floors eventually, white fireclay apron front sink, oil rubbed bronze hardware, chrome faucet, grey/green (coastal jetty by valspar) paint on walls.
