Kitchen Backsplash Advice Needed

I've been lurking here for quite awhile and everyone's posts have been very helpful in our whole house renovation, thank you! We've installed a travertine tile backsplash in the kitchen. Now it's time to grout and I'd like advice on whether we should use an enhancing sealer and if we should leave grout in the natural holes or use a grout bag to just grout between each one. I've read several posts about the advantages and disadvantages of enhancing sealer and also about the different grout techniques. I'm looking for opinions what would look best with our kitchen design. We have dark maple cabinets and dark granite counters (color is called Esmerelda). I've included pics of the backsplash as it is now as well as another shot prior to installing the backsplash that shows the counters and cabinets better
