Nobody likes ballparking. My experience on a 50k btu new house install in a basement was that there was no discernable difference between 80 and 90%. The 90 furnace was more but the exhaust work was less. The builder never gave me exact numbers so the 80% might have cost more. My example is to give you an idea that the details really matter. If you have to run a new chimney then that could cost more than the price differential. But I've heard $1500 ...

I guess my question is more about the units themselves rather than the installation plus the unit. Does a 95% variable speed unit cost much more than an 80% variable speed unit assuming both are 80K BTU, 16 SEER, 13 EER?

the answer is no. dealer cost difference is relatively small. markup is the main factor. have to be comparing apples to apples though. two stg Var speed 80% versus two stg Var speed 95%.

Here is a web site which lists prices for Carrier furnaces. It looks like the difference between a 58MVC060 95% efficiency furnace and a 58CVA070 80% efficiency is about $650. http://ncshvac.com/page9.php
