You should not have a mold problem if the humidity is kept under 50%.

Did you mean above 78 degrees "and" above 50% humidity or above 78 degrees "or" above 50% humidity? In my opinion it should be the latter. You can get a thermostat that has a cool to dehumidify function. It will turn the AC on to help lower the humidity even if the temperature is at the set point. It works well on rainy days when the outdoor temperature is mild but the humidity is high.

It is wired series so I was told both conditions have to be met for it to kick the air on. They tried to wire parallel which would have turned the air on when just 1 of the 2 conditions called for it. It wouldn't work properly when parallel wired, but works fine, so far series wired.

Can you. Or anyone else give me a recommendation for the thermostat you are referring to, in case this doesn't work out.

The Honeywell Visionpro IQA thermostat has the cool to dehumidify feature. You can take a look at the manual to get an idea of how it works.
