2-stage HVAC Thermostat Recommendation

I have a Lennox 2 stage Air Conditioner with a two-stage 95% furnace. This was installed just a few months ago. The contractor used a Honeywell PRO6000 series thermostat.

I've been very disappointed with the staging of the AC. It will run for about 10 seconds at single stage and then kick into the two stage every time. This is leaving the house unnecessarily humid.

I've looked through every Honeywell thermostat manual I can find and can't locate any way to change the configuration/timing of the staging on any of their thermostats.

My goal is to have the system always run for at least 15 minutes at single stage before kicking into two stage unless the temperature offset is more than about 4 degrees.

Does anyone know a brand/model thermostat that allows this level of control?
