AC/Heating help for new build

I have 3 quotes so far but it is Greek to me in terms of if one is better than the others.

Could someone help and let me know if based on the quotes if there is one of the companies you would work with?

Also, all I have told them so far is that I want my 3 floor levels to be able to be seperately contolled and in the kitchen I will probably need MAU as I want to put a big hood fan with a 1200 cfm blower.

Also if you have any other advice for me, it would be much appreciated.
