Actual oil contaminates wood and doesn't allow any finish to adhere. It is what you'd do for an actual butcher block used for food prep though, as mineral oil is food safe.

Now, an "oil finish" is a completely different animal, and something like a tung oil will harden and provide protection. Or, there's an "oil based finish" like an oil based polyurethane. That will give the most protection for the wood.

So, read a little more, and see if you can't clear up your confusion as to what is your actual subject. After you've digested some info, more specific targeted questions can probably give the answers you need.

I believe duChateau is oil finished. There are quite a few different suppliers of oil finishes and of pre-finished floors with oil finish.
I have done very few floors with the new generation of oil finishes. I'm preparing to use Rubio Monocoat on my own floor to try to determine whether it performs as well as advertised.
Each supplier generally has it's own maintenance products including a cleaning product and something to treat the finish with periodically. The advantages of oil are that it doesn't have the plastic appearance and can be refreshed without moving all the furniture. The disadvantages are that it requires regular maintenance and probably isn't as water resistant as a urethane finish.
