aging pine patina

I'm ready to sand and finish the new, wide, pine floorboards.Waterlox sounded like the product for me, but I read that the ambering process would not continue. My confusion is : will the Waterlox prevent the pine from darkening to that rich, honey color that I want or is it the product itself . I hate the color of new pine and didn't want to use a stain for an effect that would come about on its own. Should I just wait several months for the pine to age and then use the Waterlox ?
