Alternate flooring ideas

We're buying a house that we will likely want to change out some of the floors in. The existing floors are almost all these giant white gloss tiles - that show everything. These giant tiles extend into the kitchen as well.

In the center of the family room there's a cut out rounded area for carpet. The adjacent dining room is the same carpet.

If we were putting new flooring in, ideal would be -
Kitchen = wood
Walking areas, halls and breakfast nook = neutral tile (not shiny)
Family room = carpet
Dining room = wood

We don't like the "round" edges they did here.

So to redo this house - it almost going to have to require removing the old tiles - or building up a level surface to work with. Of course we don't want it to get crazy out of control expensive either. Thus I'm looking for suggestions.

The final thought on this is to maybe just leave it for a year and see how we feel then...
