Is there ANY reason to use Polyurethane instead of Waterlox?

We are putting down 3000 sq/ft of reclaimed heart pine flooring with the dirty-top/rustic finish. I have read tons of threads on THS and other forums. Waterlox seems to be the consensus in my research. The supplier and installer each are pushing for the poly finish. They each have 20+ years experience. I want waterlox. Should I insist on waterlox? Is there ANY reason to go along with the poly? I want a natural, rustic look; not fake plastic. Just making sure before its too late.

Here are some room pics. The beams will remain unfinished.
