Character grade red oak floor

The floor in our 125 year old renovation house is in place ready for the hardwood guys to come stain. It is 5" character grade red oak, solid plank. Is there anything different with char grade that I should take into consideration while choosing stain? We want to tame down the grain striping but like the character pits, etc.

Anyone with photos of this type of flooring they can share?

We have cherry cabinets in the kitchen with soapstone counters and I want the floor to be a little lighter than the cabinets and in the warm browns. The Minwax Provincial looks like it might work. Thoughts?
