I bought the liquid lecithin at my local health food store. I really don't know how important it is to the recipe. I know that many bakers advocate adding it to baked goods. According to Pleasant Hill Grain.com, "As a 100% natural emulsifier, lecithin improves moisture tolerance and uniform suspension of ingredients and shortens mixing times. Bread texture and elasticity are improved, and crusts are more tender. Fats and oils are stabilized, reducing rancidity and prolonging freshness." I've also included a link to the Bob's Red Mill fact sheet about lecithin. I wanted to experiment with adding it to my homemade breads, but never got around to purchasing it. When I saw it listed as an ingredient in the Laurel's Kitchen recipe, I finally decided to break down and visit the health food store. I'm assuming that the dry milk powder adds some body to the butter spread and the lecithin helps emulsify & stabilize the spread a bit. Yes, I have one, works fantastically. I have lost 21 lbs in teh last week and a half and feel better than I have felt in years. Make salad with any of the veggies you have in your list here. Also use "Dark" leaved lettuces etc. Make salad dressing with the following, 1/2 cup fat free chicken broth add fresh ginger 3 tablespoons light soy sauce hot mustard, (powder or ready made) hot chile sauce 1 tablespoon sesame oil The amounts of the hot stuff is dependant on how hot you can eat it. The hotter the better, the hotter it is, the more calories you burn. You can eat this salad as often and as much as you want. You can also eat regular food, just stay with no or low fat contents, and low or no sugar. The first couple of days were pretty tough because I still wanted the CARBS but after that it got very easy, I am full so much faster now. My hubby lost 17 lbs in the same time. We both cheat at weekdends but try to stay within realistic boundaries so as not to undo the good work. Of course you must drink 6 - 8 glasses of water a day. But then of course we should all do that anyway...LOL....No more soda or beer. I used to drink about 6 cans of coke a day and now find that I don't even crave them. The claim is that it contains 100; by my calculations, one sixtieth (they say it makes 60-2x2" squares) prepared using the average amount of flour called for would have about *200* calories. If one cut out the honey and unrefined sugar, which don't offer much nutritionally (molasses has a *lot* of good stuff for you), it would be roughly 150 AND you wouldn't lose out on the vitamins/minerals it is claimed to contain.

Did you get the medical check up first? Talk to the dietitian to make sure you get balanced meals. Do you have any health issues? Just starting out cold turkey may not be good for anyone.
