dinnerware

We have never, in over 20 years of marriage, bought any dinnerware. It's all been used sets relatives were discarding. The one we've had for at least the last 15 years (probably more; I can't remember not having them) belonged to my aunt, who fed her farmhands lunch on them for many years, is made of a substance that shows every knife and fork mark. They CAN be removed by scouring after every use with baking soda or similar, but who wants that? I'd like to know what this substance is so we can avoid it in our purchase.
And what do we WANT to avoid this situation?
Thanks!
